If you love pastries, you’ve got to make a detour to the Montreal Marriott Château Champlain and indulge in a treat from pastry chef Sylvain Vivier.

High-End Pastries
Originally from Normandy, France, Sylvain began his career in 2002 with Philippe Gasse, a pastry, chocolate and ice cream artist. A 3-year training course that instilled in him a passion for the craft earned him the title of Best Apprentice Pastry Chef in the region, in addition to finishing fourth in the national competition in 2005. He then left the west of France for the banks of the Loire, in Blois, with Eric Saguez, MOF (meilleur ouvrier de France), where he learned more about high-end pastries and the rigors of the trade. It was there that he was seduced by the artistic aspect of pastry-making.

From France to Montreal
His taste for travel led him to Montreal in 2016, where he joined Maison Christian Faure, MOF, as head of production. He then moved on to the Queen Elizabeth, working alongside Jean-Marc Guillot, MOF and World Pastry Champion. Building on these years of experience, he then joined the Montreal Marriott Château Champlain for his first position as hotel pastry chef. With Sylvain, flavours are always perfectly balanced, and his desserts verge on perfection. It’s up to you to find out, but be warned: there’s a danger of addiction!
